Today we are going to discuss the
recipe of momos with spicy chutney. As you all know momos is favorite among
kids and it is not so hard to make and it can be made in less time You can also
make spicy chutney at home and it tastes very spicy and tempting and so kids
love it very much.
Ingredients:-
* 1 cup refined flour
* 3-4 tbs oil
* 400-450 grams cabbage
* 1 carrot
* Onion, capsicum (optional)
* Ginger,green chili, garlic
* Dry red chilies
* Vinegar, soya sauce
* Tomato ketchup
* Salt as per taste
Process:-
1. Let us start with kneading the dough for momos. Add 1 cup refined
flour, to it add ¼ tsp salt. Now add water in small portions and knead soft
dough. Grease your hands with some oil and knead the dough again until smooth.
The dough is ready. Cover and keep the dough aside for 15 to 20 minutes to set
and then start making the memos.
2. Now, let us prepare the stuffing for momos. First of all, grate the
cabbage first. We have 400 to 450 grams of cabbage and a small carrot. The
carrot is rinsed and peeled. So, let us grate the carrot too. In case the
carrot is not available you can also use onions in it. You can also add any
other vegetables as well like peas, capsicum, etc.
3. Now let us make the filling For this heat a pan and add 2 tsp oil to
it. W hen the oil is hot, add grated ginger to it, followed by 1 finely chopped
green chilly and sauté for a while. Mix this tempering to the grated cabbage
now. just slightly roasted the ginger and green chilly. Now add more than ½ tsp
salt, 2 tbsp finely chopped green coriander and mix everything really well.
Stuffing is ready now.
4. 20 minutes are done and the dough is ready as well. Grease your hands
with some oil and knead the dough again. Now divide the dough into small portions.
Roll out the dough lump like a long log and further divide into small lumps.
5. Let us now start making the momos. make sure you Cover all the lumps
to prevent them from drying. Take one dough lump at a time and roll giving it a
round shape and then dust with dry flour. Roll out the dough ball into 2.5 to
3-inch diameter thin poori. If it sticks to the rolling plate, dust it again
with the dry flour.
6. Let us roll out some pooris first then stuff them up. Lift one poori
on your hand and top it with 1 to 1.5 tsp stuffing. Now fold the poori. You can
fold the momos with numerous styles. As per your preference give it a shape.
7. With this, you will get round shaped momos. Keep it on the plate.
Momos are ready, place it on the plate. Likewise, prepare all the momos like
this. Cover these momos with a cloth to prevent them from drying. We are done
with stuffing all the momos.
8. let us now cook them. We usually use momos maker for steaming them.
In case you don’t have the momo maker then take any vessel on which you easily
place a sieve. To the vessel add 2-3 cups of water and place the momos on this
sieve. Grease the sieve with some oil.
Place the momos at some distance
on the sieve When the water starts simmering, place the sieve over the vessel
and cover it well. Now let the momos steam for 10 minutes. Keep the flame
medium-high. 10 minutes are done and the momos are ready as well.
9. There is a change in the color of momos and appear shiny on the
surface. Turn off the flame and take off the sieve from the vessel. Now
transfer the momos to the plate. Momos are always served to steaming hot.
SPICY CHUTNEY / CHILI
PASTE RECIPE
Now we will show you how to make Chili Paste or the spicy Chutney for
Momos.
1. We need to use dry Red Chilies. Which has a nice bright color but is
less in spice. Take the Chili and remove the stem from it. If you want it
spicier than don't take out the seeds from it.
2. Put this in a pan, add a roughly chopped Onion into this. Now we'll
add water into this. And we'll boil it. Cover it up and boil this for about
half an hour so that the Chilies get tender. This has boiled nicely. Remember
when you are making this at home Open up the windows, doors, and exhaust of the
kitchen. The water has almost dried. At this stage, we'll turn off the
gas.
3. Let it cool down a bit and then blend it. These cooled Chilies
will go in the blender jar. We can add very little oil to this so that it
grinds easily. Do not grind it completely keep it a bit coarse.
4. Take a pan. Put some oil in it and now we roast the Chili paste. Oil
is hot, we add chopped Ginger in it and chopped Garlic. Quick stir. It is
starting to brown. At this stage, we add our Chili paste to it. We need to
roast it nicely so that the rawness of Chilies is removed.
5. Into this, we'll add a little Vinegar. Very little Soya Sauce. Salt
to taste. And very little Sugar. Now it will be nicely roasted. For about 10-12
minutes on high flame. It has roasted nicely. At this stage, we turn off the
gas.
6. Now we add Chinese Sesame Oil. This is an optional ingredient If you
don't have it, that is perfectly fine. At the same time, we add a little Tomato
Ketchup So that the Chutney gets a body. Our Chili Paste or The Chlli sauce you
get with Momos is ready. You can serve it with hot momos, it tastes very
good...
